We grow four unique pepper varieties locally in Belgium. The cycle begins in February, when the seeds are carefully planted. The first peppers are ready to harvest in June, and the plants continue producing fruit until late October.

Four Varieties

We grow four unique pepper varieties right here in Belgium, not imported from halfway around the world.

The Ghost Pepper

One of them is the famous Ghost Pepper: super hot, but it grows milder in our climate while keeping its fruity character.

Patience
is the spice

Every week, we walk through the greenhouses and hand-pick only the peppers that have reached perfect ripeness. This careful, gradual harvest ensures that every pepper develops its full flavour, aroma and character.

NOT JUST HEAT

We don't rush the drying process. Days of controlled, slow drying concentrate the sugars and deepen the smoky notes. This is where raw heat becomes layered flavour.

The result is a heat that complements instead of overpowering. It invites you back for another bite rather than chasing you away.

Local Climate

Belgian summers are cooler, so the peppers ripen slower. That slower cycle builds more complex sugars and a gentler, more rounded heat.

Three varieties stay secret but their role is clear. They round out the Ghost Pepper's fire, adding body, sweetness and a lingering warmth.

Every harvest is unique

Sunshine influences both the heat and flavour of our peppers, so each bottle of Madmax may taste slightly different. That's the beauty of an organic product: nature never makes exact copies.
