Pizza Pique Pique Chique

Stolen from a brother-in-law. Yes, it's that good. A BBQ pizza with two secrets: sun-dried tomato paste and a final drizzle of Madmax.

  • Prep15 min
  • Cook10 min
  • Serves2
  • Heat🌶️🌶️🌶️

Ingredients

  • 1 ball fresh pizza dough (a good bakery is worth it)
  • Flour, for dusting
  • 3 tbsp basic tomato sauce (with basil)
  • 2 tbsp sun-dried tomato paste (secret n°1)
  • 100 g grated mozzarella
  • 4 slices parma ham
  • 1 ball burrata
  • Handful cherry tomatoes, halved
  • Handful fresh arugula
  • Madmax spicy oil (secret n°2)

Steps

  1. Fire up the BBQ — a Big Green Egg is ideal — and bring it to 250 °C.
  2. Dust a wooden pizza peel with flour. Flatten the dough by rolling from the centre outward.
  3. Spread the basic tomato sauce, then a thin layer of sun-dried tomato paste.
  4. Scatter grated mozzarella, then lay the parma ham on top.
  5. Bake in the covered BBQ until the crust is charred at the edges and the cheese bubbles, about 6–8 minutes.
  6. Off the heat, tear burrata over the pizza and scatter cherry tomatoes and arugula.
  7. Finish with a generous drizzle of Madmax. Slice and serve immediately.

Tip: No BBQ? Use a pizza stone in the oven at maximum temperature.
